Coconut Fudge

A delicious treat you can make in advance and store away for when a sweet craving hits.

Alternatively, this can be a great snack for those on a ketogenic diet (use stevia, erythratol or xylitol to sweeten). You can use it as a base and introduce other ingredients/flavours for variety - try chopped nuts!

 

 

INGREDIENTS:


1 cup coconut oil

 

1 cup cocoa powder

 

1 Tablespoon vanilla extract

 

Sweetener of your choice (maple syrup, stevia, xylitol...)

 

Pinch of sea salt (or better yet himalayan rock salt)

 

Optional: 2-4 Drops peppermint essential oil

 

INSTRUCTIONS:

 

Scoop out 1 cup of coconut oil into a mixing bowl. If you live in a colder climate, your coconut oil may be firmer - Whip it with a stand or hand mixer until it's light and fluffy. If your coconut oil is at room temperature and already liquid you can skip this step.
 

Mix the whipped/melted coconut oil, cocoa powder, vanilla and salt together. Mix well and slowly add honey or sweetener of choice. Taste as you go to make sure you don't over sweeten your fudge. Mix in 2 drops of peppermint essential oil if using.
 

Pour fudge into a baking tray or tin (we tried a 23x13cm loaf tin). Spread fudge evenly accross the base and cover with cling film..
 

Refrigerate until fudge is set and hard (depends on the thickness - about 1-4 hours)
 

Cut fudge into small squares and serve (or lock the door and eat them all). Store the rest in an airtight container in the fridge.
